Mexican Stuffed Peppers.

Talk about comfort food that is easy to make & once you start eating you will never stop! Enough of the talking though, here's the recipe & everyone go try it afterwards!

Ingredients:

-Rice Pilaf (I prefer the Near East brand with the Spanish mix flavor!) - 1 box
-Peppers (of any and every color!) - 3-4 pepper
-White onion - 1 
-Tomatoes - 2
-Jalapenos - 2 or 3
-Cilantro
-Black Beans
-Seasonings:
     ~Black Pepper
     ~Red Crushed Pepper
     ~Italian Seasoning
     ~Salt
     ~Cumin Powder
     ~Chili Powder
-Vegetable Oil
-Mexican Cheese 
-Sour Cream
-Hot sauce (any Mexican hot sauce of your choice)

Directions:
1. Cook the rice according to your own preference - add diced tomatoes to the rice to let the flavors of the tomatoes soak in with the rice
2. In a pan, pour 2 teaspoons of vegetable oil and let it heat. Afterwards, saute onions until they are translucent/brown
3. Add in black beans, jalapenos and cilantro and let them simmer with the onions as the flavors mix.
4. After a few minutes, add the rice and mix well
5. Add all the seasonings (salt, black pepper, red crushed pepper, italian seasoning, salt, cumin powder, chili powder) according to your taste. Start with less and add more as you taste.
6. Let the mix cook under low heat for 7 minutes.
7. Preheat the oven to 350 degree
8. After the mix has cooled for a while, start stuffing the peppers according to the size of the peppers (mini or large peppers can work)
9. Before putting them in the oven, sprinkle mexican cheese on top of the peppers- don't be afraid to splurge! Cheese is the best part, always!
10. Let the peppers cook in the over for about 10 minutes or until they are dark around the edges
11. Serve hot with a "dallop of daisy" sourcream and mexican hot sauce
12. Enjoy without any hesitations! :)
