Mexican Stuffed Peppers.

Talk about comfort food that is easy to make & once you start eating you will never stop! Enough of the talking though, here's the recipe & everyone go try it afterwards!

Ingredients:

-Rice Pilaf (I prefer the Near East brand with the Spanish mix flavor!) - 1 box
-Peppers (of any and every color!) - 3-4 pepper
-White onion - 1 
-Tomatoes - 2
-Jalapenos - 2 or 3
-Cilantro
-Black Beans
-Seasonings:
     ~Black Pepper
     ~Red Crushed Pepper
     ~Italian Seasoning
     ~Salt
     ~Cumin Powder
     ~Chili Powder
-Vegetable Oil
-Mexican Cheese 
-Sour Cream
-Hot sauce (any Mexican hot sauce of your choice)

Directions:
1. Cook the rice according to your own preference - add diced tomatoes to the rice to let the flavors of the tomatoes soak in with the rice
2. In a pan, pour 2 teaspoons of vegetable oil and let it heat. Afterwards, saute onions until they are translucent/brown
3. Add in black beans, jalapenos and cilantro and let them simmer with the onions as the flavors mix.
4. After a few minutes, add the rice and mix well
5. Add all the seasonings (salt, black pepper, red crushed pepper, italian seasoning, salt, cumin powder, chili powder) according to your taste. Start with less and add more as you taste.
6. Let the mix cook under low heat for 7 minutes.
7. Preheat the oven to 350 degree
8. After the mix has cooled for a while, start stuffing the peppers according to the size of the peppers (mini or large peppers can work)
9. Before putting them in the oven, sprinkle mexican cheese on top of the peppers- don't be afraid to splurge! Cheese is the best part, always!
10. Let the peppers cook in the over for about 10 minutes or until they are dark around the edges
11. Serve hot with a "dallop of daisy" sourcream and mexican hot sauce
12. Enjoy without any hesitations! :)

A little bit of love from The Office

Watched one of the cutest episode of the Office a few days ago...



Jim & Pam's relationship was always the hype ever since the season began in late 2007. They struggled & fought their way to love. And then obviously, there was that great wedding episode which brought all the sappy girls in the world to tears.

& recently their relationship wasn't going well because Jim started a new company in Philly while Pam was stuck in Scranton, PA taking care of two kids. She really didn't have a say in the decision. A few months later they went to couples therapy and it was kind of working. They had to tell each other whenever they felt appreciated by one another. At some points it wasn't working out for them. Pam said, "my heart feels clogged and heavy." 

Jim was leaving for a meeting in Philly, and Pam runs down with an umbrella as an excuse to see him again because their "goodbye" hug was very awkward. She hands him the umbrella and turns around to walk away...Jim says "wait" and bends down (cause shes a shorty lol) and just hugs her..just keeps hugging her and Pam is confused as her arms are just in the air. 

The camera goes back to their wedding day where the priest is reciting this verse:
1 Corinthians 13:4-8 Love is patient and kind; love does not envy or boast; it is not arrogant or rude. It does not insist on its own way; it is not irritable or resentful; it does not rejoice at wrongdoing, but rejoices with the truth. Love bears all things, believes all things, hopes all things, endures all things. Love never ends. As for prophecies, they will pass away; as for tongues, they will cease; as for knowledge, it will pass away.

And you see Pam & Jim's happy faces at their wedding day...and immediately Pam's arms swings around Jim and she hugs him tight and can't stop crying. They give each other the most realest kiss that I've seen all season.. and this made my heart feel content...

#healthyflow



Lets make something that is super easy & EXTREMELY DELICIOUS. I call this: "avacado, sunnyside up toast" After trying this, I've come to realize that I can eat this every single morning while sipping on some masala chai..



Ingredients: White bread, Avacado, Egg, Italian Seasoning, Black Pepper, Red Crushed Pepper, Hot sauce (any choice, but Mexican is the way to go) ;)
  1. Lightly toast white bread
  2. Mesh avocados in a separate bowl, sprinkle a pinch of salt 
  3. Crack an egg into a hot pan and place a plate over the pan to let the egg cook thoroughly
  4. Spread the avocado mesh on the toasted bread..place the sunny side up
  5. Top it off with Italian seasoning (basil, parsley, garlic..), black pepper & red crushed pepper..do not forgot the hot sauce - it adds the perfect kick to the meal!
  6. Last but not least, enjoy the delicious with a drink that your palate prefers...coffee, tea, OJ, or a smoothie? haha

Why solo dance parties are awesome.

The best feeling in the world are those moments where you let go of every misery in your life and dance to your favorite songs. Whether it may be Tay swift, Pheonix, Usher or even A.R Rahman's heart filled Jai Ho! (Lets not forget the remix with The Pussycat Dolls) 


Every song tells its own story...every song you listen to will remind you of a certain place or person. Always make sure you dance to your own beat - you are the master of your own destiny. Dance to the beat of YOUR own desires.

Ernest Hemingway once said, "write hard and clear about what hurts" ...in this case DANCE about what hurts. DANCE about what makes you happy. Hell, dance away how YOU want to feel in that moment.

Whether you are the dancing queen or a regular girl with two left feet... who cares? JUST DANCE. You do not need friends, you do not need a club. At the end of the day all that matters is your awesome iPhone headphones, a Pandora station & and all ears...
